Marble Platters & Cheese Boards

Marble is the standard surface for cheese service, and not by convention alone. Stone holds a low temperature, so a soft cheese keeps its shape through a long evening instead of collapsing into a puddle within twenty minutes.

What to serve on them

Cheese and charcuterie, obviously. Also chocolate and confectionery, sushi, canapés, and pastry — anything that benefits from a cool base. Chill the platter in the fridge for an hour beforehand and it will hold temperature for most of a dinner party.

Inlay work

Several platters carry Pietra Dura borders with elephant or floral motifs in semi-precious stone. The inlay sits flush and is fully polished, so it neither catches a knife nor traps food.

Care

Hand wash and dry immediately. Avoid citrus and vinegar sitting on the surface — both etch marble. Cut on a separate board if you can; knives dull against stone.
